Instructions

  1. **Prepare the Dragon Fruit Filling:** In a food processor or blender, combine the dragon fruit pulp, chilled coconut cream, maple syrup, and vanilla extract (if using). Blend until the mixture is completely smooth and creamy.
  2. **Chill the Filling:** Transfer the dragon fruit mixture to a shallow dish. Cover it and refrigerate for at least 1-2 hours, or until it is firm enough to be rolled into balls. For quicker setting, you can place it in the freezer for 30-45 minutes.
  3. **Form the Treats:** Once the filling is firm, scoop out small portions, about 1 tablespoon each. Roll them gently between your palms to form smooth, uniform balls. Place the formed balls on a parchment-lined baking sheet.
  4. **Firm Up the Balls:** Transfer the baking sheet with the dragon fruit balls to the freezer for an additional 15-20 minutes. This step helps them hold their shape better when dipped in chocolate.
  5. **Melt the Chocolate:** In a microwave-safe bowl or a double boiler, melt the chopped dark chocolate with the coconut oil (if using). Stir frequently until the chocolate is smooth and glossy. Allow it to cool slightly to a comfortable dipping temperature.
  6. **Dip and Decorate:** Using a fork or a dipping tool, carefully dip each chilled dragon fruit ball into the melted dark chocolate, ensuring it is fully coated. Gently tap off any excess chocolate.
