  • 1 ½ cups cassava flour
  • 1 cup warm water
  • ½ teaspoon sea salt

Instructions

  1. In a large mixing bowl, combine the cassava flour and sea salt. Gradually add the warm water, mixing with a spoon or your hands until a shaggy dough forms.
  2. Turn the dough out onto a clean surface and knead for 3-5 minutes until it becomes smooth and pliable. If the dough is too sticky, add a tiny bit more cassava flour; if too dry, add a teaspoon of water at a time.
  3. Divide the dough into 8-10 equal pieces. Roll each piece into a smooth ball.
  4. Heat a cast-iron skillet or non-stick griddle over medium heat. Do not add oil.
  5. Place one dough ball between two pieces of parchment paper or plastic wrap. Using a rolling pin, roll it out into a thin, approximately 6-inch diameter circle. Aim for an even thickness.
  6. Carefully peel the tortilla from the parchment paper and place it onto the hot skillet. Cook for 1-2 minutes per side, or until light golden-brown spots appear and the tortilla begins to puff slightly.
  7. Transfer the cooked tortilla to a plate and cover with a clean kitchen towel to keep warm and soft while you cook the remaining tortillas.
  8. Serve warm with your favorite fillings.

* Dough consistency is key: it should be soft and pliable, not sticky or crumbly. Adjust flour or water in small increments.
