Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground beef
- 1 large onion, finely chopped
- 2 carrots, finely chopped
- 2 celery stalks, finely chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1/2 cup beef broth
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt to taste
- Freshly ground black pepper to taste
- 1 pound tagliatelle or fettuccine pasta

Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add chopped onion, carrots, and celery to the pot. Cook until softened, about 8-10 minutes, stirring occasionally.
- Stir in minced garlic, oregano, and basil. Cook for 1 minute until fragrant.
- Pour in crushed tomatoes and beef broth. Season with salt and pepper. Bring the sauce to a simmer, then reduce heat to low, cover, and let it gently simmer for at least 1 hour, or up to 2-3 hours, stirring occasionally. The longer it simmers, the richer the flavor.
- About 15 minutes before the sauce is ready, cook the pasta according to package directions until al dente. Drain, reserving about 1/2 cup of pasta water.
- Add the drained pasta to the sauce, tossing to coat. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.
- Serve immediately, garnished with fresh chopped parsley and grated Parmesan cheese.

For a deeper flavor, allow the Bolognese sauce to simmer for at least 2 hours.
