Ingredients
- 6 ripe but firm peaches, sliced into wedges
- 1 cup apple cider vinegar
- 1 cup water
- 1/2 cup granulated sugar
- 1 tablespoon kosher salt
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds
- 1/2 teaspoon red pepper flakes
- 2 star anise pods
- 1 cinnamon stick
- 4–5 sprigs fresh mint or basil, roughly chopped
Instructions
- Wash and slice the peaches into 1/2-inch thick wedges, removing the pits. Set aside.
- In a medium saucepan, combine the apple cider vinegar, water, sugar, salt, black peppercorns, mustard seeds, red pepper flakes, star anise, and cinnamon stick.
- Bring the mixture to a boil over medium-high heat, stirring until the sugar and salt are fully dissolved. Reduce heat and simmer for 5 minutes to allow the flavors to meld.
- Carefully pack the peach wedges into clean, sterilized pint-sized jars, leaving about 1/2 inch of headspace. Distribute the fresh mint or basil among the jars.
- Pour the hot brine over the peaches, ensuring they are fully submerged. Tap the jars gently to release any air bubbles.
- Seal the jars with lids and rings. Allow the jars to cool to room temperature before refrigerating.
- For best flavor, allow the peaches to pickle in the refrigerator for at least 24-48 hours before serving.
