Ingredients

- * 1/2 cup balsamic vinegar
- * 1/4 cup chicken broth
- * 2 tablespoons honey or maple syrup
- * 2 cloves garlic, minced

- * 2 sprigs fresh thyme
Instructions
- Pat the chicken pieces dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the chicken and sear for 5-7 minutes per side, until golden brown. Remove chicken from the skillet and set aside.
- Reduce heat to medium. Add minced garlic and diced shallot (if using) to the skillet and sauté for 1-2 minutes until fragrant.
- Pour in the balsamic vinegar and chicken broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer.
- Stir in the blackberries and honey or maple syrup. Add the fresh thyme sprigs.
- Return the seared chicken to the skillet, nestling it into the sauce. Bring the sauce back to a gentle simmer.
- Cover the skillet and cook for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove the lid and continue to simmer for another 5-10 minutes, or until the sauce has thickened to your desired consistency. Remove thyme sprigs before serving.

* For a thicker sauce, remove the chicken and reduce the sauce further over medium-high heat.
* Fresh blackberries are ideal, but frozen can be used without thawing.
