Ingredients
- 2 cups seedless grapes (green or red), washed and thoroughly dried
- 2 cups granulated sugar
- 1/2 cup water
- 1/4 cup light corn syrup
- Gel food coloring (blue, purple, pink/red)
- Edible white pearl dust or glitter (for stars)
- Wooden skewers or toothpicks
Instructions
- Wash and thoroughly dry the grapes. Insert a wooden skewer or toothpick into each grape. Line a baking sheet with parchment paper or a silicone mat.
- In a medium saucepan, combine granulated sugar, water, and light corn syrup. Stir gently over medium heat until the sugar dissolves.
- Increase heat to medium-high and bring the mixture to a boil without stirring. Cook until the syrup reaches 300-310 degrees Fahrenheit (149-154 degrees Celsius) on a candy thermometer, which is the hard crack stage.
- Carefully remove the saucepan from the heat. Divide the hot syrup into 2-3 small, heatproof bowls. Add a different gel food coloring to each bowl (blue, purple, pink/red) and stir gently to combine.
- Working quickly, dip each skewered grape into one color of syrup, then gently swirl it into another color to create a marbled, galaxy effect. Immediately sprinkle with edible white pearl dust or glitter to represent stars.
- Place the coated grapes onto the prepared baking sheet to set. Allow them to cool completely at room temperature for about 15-20 minutes, or refrigerate for 5-10 minutes until the candy shell is firm and crisp.
- Once set, carefully remove the skewers before serving.
Notes
Ensure grapes are completely dry before dipping; any moisture can cause the candy to seize or become grainy.
Use a reliable candy thermometer for accurate temperature readings, as this is crucial for the candy’s texture.
Work quickly when dipping, as the sugar syrup will cool and thicken rapidly. If it thickens too much, you can gently reheat it over low heat for a very short time.
Be extremely cautious when working with hot sugar syrup to avoid burns.
Store leftover candy grapes in an airtight container in the refrigerator for up to 2-3 days. Humidity can make the candy sticky.
