Description

These delightful no-bake bites feature a harmonious blend of creamy peanut butter and crisp cornflakes, creating a satisfyingly chewy and crunchy interior. Each piece is generously enrobed in a smooth, rich dark chocolate coating, offering a balanced sweetness. Ingredients

  • Peanut butter, creamy, natural
  • Softened butter (or unrefined coconut oil)
  • Powdered sugar
  • Vanilla extract, pure
  • Cornflakes cereal
  • Dark chocolate chips, good quality
  • Coconut oil, optional (for melting chocolate)
  • Flaky sea salt

Instructions

  1. In a large mixing bowl, combine the peanut butter, softened butter (or coconut oil), powdered sugar, and vanilla extract. Mix until well combined and smooth.
  2. Gently fold in the cornflakes cereal until they are evenly distributed throughout the peanut butter mixture. Be careful not to crush the cornflakes too much.
  3. Line a baking sheet with parchment paper. Scoop the mixture by the tablespoon and roll into small, uniform balls or press into small disc shapes. Place them on the prepared baking sheet.
  4. Refrigerate the peanut butter cornflake bites for at least 30 minutes, or until firm.
  5. While the bites are chilling, prepare the chocolate coating. In a microwave-safe bowl, melt the dark chocolate chips with the optional coconut oil in 30-second intervals, stirring after each, until smooth and fully melted. Alternatively, melt over a double boiler.
  6. Dip each chilled bite into the melted chocolate, ensuring it is fully coated. Use a fork to lift the bite out, allowing excess chocolate to drip off.
  7. Return the chocolate-coated bites to the parchment-lined baking sheet. Immediately sprinkle each with a pinch of flaky sea salt before the chocolate sets.
  8. Refrigerate for another 15-20 minutes, or until the chocolate coating is completely set.

Notes

For best results, use a good quality dark chocolate for dipping to achieve a smooth, glossy finish.

If the peanut butter mixture is too sticky to handle, chill it for a few minutes before forming the bites.

Store these bites in an airtight container in the refrigerator for up to one week.
