Instructions
- In a large mixing bowl, combine the peanut butter, softened butter (or coconut oil), powdered sugar, and vanilla extract. Mix until well combined and smooth.
- Gently fold in the cornflakes cereal until they are evenly distributed throughout the peanut butter mixture. Be careful not to crush the cornflakes too much.
- Line a baking sheet with parchment paper. Scoop the mixture by the tablespoon and roll into small, uniform balls or press into small disc shapes. Place them on the prepared baking sheet.
- Refrigerate the peanut butter cornflake bites for at least 30 minutes, or until firm.
- While the bites are chilling, prepare the chocolate coating. In a microwave-safe bowl, melt the dark chocolate chips with the optional coconut oil in 30-second intervals, stirring after each, until smooth and fully melted. Alternatively, melt over a double boiler.
