  • 1 lb boneless, skinless chicken thighs
  • 1 tbsp cooking oil (such as vegetable or sesame oil)
  • 2 cups cooked white rice, for serving
  • 1 tbsp sesame seeds, for garnish
  • 2 green onions, thinly sliced, for garnish
  • For the Miso Glaze:
  • 2 tbsp white miso paste
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1/4 cup water or chicken broth
  • 1 tsp cornstarch, mixed with 1 tbsp cold water (for slurry)

Instructions

  1. Pat the chicken thighs dry with paper towels. If desired, cut them into 1-inch pieces for faster cooking, or leave whole and slice after cooking.
  2. In a small bowl, whisk together the miso paste, soy sauce, rice vinegar, brown sugar, grated ginger, minced garlic, and water or chicken broth until well combined. Set aside.
  3. Heat the cooking oil in a large skillet over medium-high heat. Add the chicken thighs to the hot skillet. Cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F or 74°C). Remove the chicken from the skillet and set aside.
  4. Pour the prepared miso glaze into the same skillet. Bring the sauce to a gentle simmer, stirring constantly.
  5. Whisk in the cornstarch slurry. Continue to cook, stirring, for 1-2 minutes until the sauce thickens to a glossy consistency.
  6. Return the cooked chicken to the skillet, tossing gently to coat each piece evenly with the thickened miso glaze.
  7. Serve the Garlic Miso Chicken immediately over warm cooked white rice, garnished generously with sesame seeds and sliced green onions.

Notes

* For an even deeper flavor, you can marinate the chicken in half of the miso glaze for 15-20 minutes before cooking.

* Ensure your chicken is patted very dry before searing to achieve a beautiful golden crust.

* Adjust the sweetness of the glaze by adding a touch more brown sugar if preferred, or a splash more soy sauce for extra savoriness.
