Description
This Garlic Miso Chicken offers a delightful balance of savory and subtly sweet flavors. Tender chicken thighs are pan-seared to a golden finish, then coated in a rich, umami-packed miso glaze infused with fresh garlic and ginger. The sauce caramelizes beautifully around the chicken, creating a succulent texture. Served over fluffy white rice and garnished with toasted sesame seeds and vibrant green onions, this dish presents a comforting and satisfying meal.
Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 tbsp cooking oil (such as vegetable or sesame oil)
- 2 cups cooked white rice, for serving
- 1 tbsp sesame seeds, for garnish
- 2 green onions, thinly sliced, for garnish
- For the Miso Glaze:
- 2 tbsp white miso paste
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 1 tsp grated fresh ginger
- 2 cloves garlic, minced
- 1/4 cup water or chicken broth
- 1 tsp cornstarch, mixed with 1 tbsp cold water (for slurry)
Instructions
- Pat the chicken thighs dry with paper towels. If desired, cut them into 1-inch pieces for faster cooking, or leave whole and slice after cooking.
- In a small bowl, whisk together the miso paste, soy sauce, rice vinegar, brown sugar, grated ginger, minced garlic, and water or chicken broth until well combined. Set aside.
- Heat the cooking oil in a large skillet over medium-high heat. Add the chicken thighs to the hot skillet. Cook for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F or 74°C). Remove the chicken from the skillet and set aside.
- Pour the prepared miso glaze into the same skillet. Bring the sauce to a gentle simmer, stirring constantly.
- Whisk in the cornstarch slurry. Continue to cook, stirring, for 1-2 minutes until the sauce thickens to a glossy consistency.
- Return the cooked chicken to the skillet, tossing gently to coat each piece evenly with the thickened miso glaze.
- Serve the Garlic Miso Chicken immediately over warm cooked white rice, garnished generously with sesame seeds and sliced green onions.
Notes
* For an even deeper flavor, you can marinate the chicken in half of the miso glaze for 15-20 minutes before cooking.
* Ensure your chicken is patted very dry before searing to achieve a beautiful golden crust.
* Adjust the sweetness of the glaze by adding a touch more brown sugar if preferred, or a splash more soy sauce for extra savoriness.
* This dish pairs wonderfully with a side of steamed broccoli or sautéed snap peas for a complete meal.
