Description

This baked dish features savory ground chicken seasoned with aromatic herbs, combined with sweet-tart roasted cherry tomatoes and creamy, melted fresh mozzarella.   • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pint (about 2 cups) cherry or grape tomatoes
  • 8 ounces fresh mozzarella, torn or sliced
  • 1/4 cup fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add ground chicken and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Stir in minced garlic, Italian seasoning, salt, and pepper, cooking for another minute until fragrant.
  4. Stir in the cherry tomatoes, distributing them evenly over the chicken mixture.
  5. Arrange the torn or sliced fresh mozzarella over the chicken and tomatoes.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the tomatoes are softened and slightly burst, and the mozzarella is melted and bubbly.
  7. Remove from oven and let rest for a few minutes. Garnish generously with fresh basil leaves before serving.

Notes

Serve this dish with a side of crusty bread or a light green salad.

For an added layer of flavor, a drizzle of balsamic glaze can be added just before serving.

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
