  • 1 cup glutinous rice flour (mochiko)
  • 1/4 cup granulated sugar
  • 1 cup water
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup cornstarch, for dusting
  • 1/4 cup powdered sugar, for dusting

Instructions

  1. In a microwave-safe bowl, combine the glutinous rice flour and granulated sugar. Whisk well to remove any lumps.
  2. Gradually add the water, lemon juice, and lemon zest to the flour mixture, whisking continuously until a smooth batter forms.
  3. Cover the bowl loosely with plastic wrap, leaving a small vent. Microwave on high for 1 minute.
  4. Remove the bowl, stir the mixture thoroughly with a wet spatula, and re-cover. Microwave for another 1 minute.
  5. Repeat the process, stirring and microwaving in 1-minute intervals, for a total of 3-4 minutes, or until the mochi dough becomes translucent, thick, and very sticky. The exact time may vary depending on your microwave's power.
  6. Lightly dust a clean work surface or a baking sheet with cornstarch.
  7. Carefully transfer the hot, sticky mochi dough onto the cornstarch-dusted surface.
  8. Allow the dough to cool slightly until it is warm enough to handle.
  9. Dust your hands with cornstarch and gently knead the mochi dough a few times to ensure smoothness.
  10. Divide the dough into 12-15 equal pieces. Roll each piece into a small ball.
  11. In a shallow dish, combine the cornstarch and powdered sugar. Roll each mochi ball in the mixture to coat evenly.
  12. Serve immediately or store at room temperature in an airtight container.

Notes

Working with warm mochi dough is easier, but be cautious as it can be very hot.

Keep your hands and tools dusted with cornstarch to prevent sticking.

For best texture, consume mochi on the day it is made.

Store leftover mochi in an airtight container at room temperature for up to 2 days; refrigeration can alter the texture.
