Description

This savory quick bread offers a delightful combination of classic Italian flavors in a tender, moist loaf. The golden-brown crust gives way to a soft crumb, studded with vibrant sun-dried tomatoes and aromatic fresh basil. Subtle notes of mozzarella cheese are woven throughout, complementing the tangy tomatoes and fragrant herbs. Baked to perfection, this bread presents a balanced profile of savory and fresh, making it a versatile addition to any meal or a satisfying snack on its own.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk
  • 1/2 cup olive oil
  • 2 large eggs
  • 1/2 cup sun-dried tomatoes in oil, drained and chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease and flour a 9×5 inch loaf pan, or line with parchment paper.
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, granulated sugar, salt, and black pepper until well combined.
  3. In a separate medium bowl, whisk together the milk, olive oil, and eggs until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are acceptable.
  5. Gently fold in the chopped sun-dried tomatoes, shredded mozzarella cheese, and fresh basil until evenly distributed throughout the batter.
  6. Transfer the batter into the prepared loaf pan, spreading it evenly.
  7. Bake for 45-55 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean.
  8. Allow the bread to cool in the pan for 10-15 minutes before carefully transferring it to a wire rack to cool completely before slicing and serving.

Notes

Avoid overmixing the batter to ensure a tender and moist crumb. Overmixing can lead to a tough texture.

For enhanced flavor, use high-quality sun-dried tomatoes packed in olive oil.

This quick bread is delicious served warm or at room temperature. It pairs well with soups, salads, or as an appetizer.

Store any leftover bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days.
