Ingredients
- 4 large egg whites, at room temperature
- 1/2 teaspoon cream of tartar
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper.
- In a very clean, dry bowl of a stand mixer fitted with the whisk attachment, or using a hand mixer, beat the egg whites on medium speed until foamy.
- Add the cream of tartar and salt, then continue beating until soft peaks form.
- Gradually add the granulated sugar, about one tablespoon at a time, beating on high speed until stiff, glossy peaks form and the sugar is fully dissolved. The meringue should be smooth and shiny.
- Gently fold in the vanilla extract and then the mini chocolate chips using a spatula, being careful not to deflate the meringue.
- Drop spoonfuls of the meringue onto the prepared baking sheets, leaving about 1 inch between each cookie. Alternatively, pipe them using a piping bag with a large round tip for a more uniform shape.
- Place the baking sheets into the preheated oven. Immediately turn off the oven.
- Leave the cookies in the oven, undisturbed, for at least 6 hours or preferably overnight, allowing them to cool completely as the oven temperature drops. Do not open the oven door during this time.
- Once completely cool, remove the cookies from the oven and gently peel them off the parchment paper.
