  • 1 cup glutinous rice flour (mochiko)

Instructions

  1. **Prepare the Peach Puree Filling:** Peel, pit, and chop the peaches. In a medium saucepan, combine chopped peaches, 1/4 cup granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until peaches are very soft, about 8-10 minutes.
  2. Remove from heat and mash the peaches with a fork or potato masher until mostly smooth, or use an immersion blender for a completely smooth puree.
  3. In a small bowl, whisk together 1 tablespoon cornstarch and 2 tablespoons water to create a slurry. Stir the slurry into the peach puree in the saucepan.
  4. Return the saucepan to medium heat and cook, stirring constantly, until the puree thickens, about 2-3 minutes. Remove from heat, transfer to a bowl, cover with plastic wrap directly on the surface to prevent a skin from forming, and chill in the refrigerator for at least 1 hour, or until firm.
  5. **Prepare the Mochi Dough:** In a large microwave-safe bowl, whisk together glutinous rice flour, 1/4 cup granulated sugar, and 1 cup water until smooth and no lumps remain.
  6. Cover the bowl loosely with plastic wrap and microwave on high for 1 minute. Stir well with a wet spatula.
  7. Microwave for another 1 minute, then stir again. Continue microwaving in 30-second intervals, stirring thoroughly after each, until the dough is translucent, sticky, and forms a cohesive ball (total microwave time typically 3-5 minutes, depending on microwave power). Alternatively, steam the mixture in a steamer basket over boiling water for 15-20 minutes until translucent.
  8. **Assemble the Mochi:** Generously dust a clean work surface with cornstarch. Carefully transfer the hot mochi dough onto the cornstarch. Allow it to cool slightly until it's comfortable to handle.
  9. Dust your hands with cornstarch. Gently knead the mochi dough for a minute or two until it's smooth and elastic.
  10. Divide the dough into 8-10 equal pieces. Flatten each piece into a thin circle (about 3-4 inches in diameter) using your hands or a small rolling pin, keeping surfaces dusted with cornstarch to prevent sticking.
  11. Place about 1-2 tablespoons of the chilled peach puree filling in the center of each mochi circle.
  12. Carefully gather the edges of the mochi dough around the filling, pinching them together at the top to seal completely. Gently roll the mochi between your palms to form a smooth ball.
  13. Place the finished mochi seam-side down on a plate. Dust with additional powdered sugar or cornstarch if desired.
  14. Serve immediately or store in an airtight container at room temperature for up to one day.

* For the best flavor, use ripe, fragrant peaches. The sweetness of the peaches will impact the final taste of the filling.

* Ensure the peach puree filling is thoroughly chilled and firm before attempting to fill the mochi; this makes assembly much easier and prevents the filling from oozing.
