Ingredients
- 6 cups Rice Chex cereal
- 2 cups Corn Chex cereal
- 1 cup dried banana chips
- 1 cup pecan halves
- 1/2 cup unsalted butter, melted
- 1/2 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 275°F (135°C). Line a large baking sheet with parchment paper or a silicone baking mat.
- In a very large heatproof bowl, combine the Rice Chex cereal, Corn Chex cereal, dried banana chips, and pecan halves. Set aside.
- In a small saucepan, melt the unsalted butter over medium-low heat. Stir in the brown sugar, cinnamon, nutmeg, vanilla extract, and salt. Cook, stirring constantly, until the sugar has dissolved and the mixture is smooth, about 2-3 minutes.
- Pour the warm butter mixture over the cereal mixture in the large bowl. Gently toss with a spatula until all the ingredients are evenly coated.
- Spread the coated Chex mix in a single layer onto the prepared baking sheet.
- Bake for 45-60 minutes, stirring every 15 minutes, until the mix is golden brown and feels dry to the touch.
- Remove from the oven and let the Chex mix cool completely on the baking sheet before breaking it apart and storing. It will crisp up further as it cools.
Notes
Ensure the Chex mix cools completely before storing to maintain its crisp texture.
For an extra banana flavor, a few drops of banana extract can be added to the butter mixture.
Store the cooled Chex mix in an airtight container at room temperature for up to one week.
Vary the nuts by substituting walnuts or cashews for pecans, if preferred.
