Ingredients
- 8 ounces (225g) block feta cheese, crumbled
- 1/4 cup (60g) plain Greek yogurt
- 2 tablespoons extra virgin olive oil, plus more for drizzling
- 1 tablespoon fresh lemon juice
- 1 small garlic clove, minced (optional)
- 1/4 teaspoon dried oregano or za'atar
- Salt and freshly ground black pepper to taste
- 1/4 cup (30g) shelled pistachios, roughly chopped, divided
- 1/4 cup (45g) pomegranate arils, for garnish
- 2–3 sprigs fresh mint, leaves picked, for garnish
Instructions
- In a food processor, combine the crumbled feta cheese, Greek yogurt, 2 tablespoons of olive oil, lemon juice, minced garlic (if using), and dried oregano.
- Process until the mixture is smooth and creamy, scraping down the sides as needed. If the dip is too thick, add a tablespoon of water or milk at a time until desired consistency is reached.
- Taste and season with salt and pepper. Feta is naturally salty, so add salt sparingly.
- Transfer the whipped feta dip to a serving bowl.
- Garnish generously with the remaining chopped pistachios, pomegranate arils, and fresh mint leaves.
