Description

This elegant dessert features a light and airy texture with the vibrant, sweet-tart flavor of fresh blackberries. Prepared without baking, it offers a smooth, creamy consistency, perfectly chilled and garnished with whole berries for a delightful finish.


Ingredients

  • 2 cups fresh or frozen blackberries
  • 1/4 cup water
  • 1/4 cup maple syrup, or to taste
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 2 cans (13.5 oz each) full-fat coconut cream, chilled overnight
  • Pinch of salt
  • Fresh blackberries, for garnish

Instructions

  1. In a small saucepan, combine the blackberries and water. Cook over medium heat for 5-7 minutes, stirring occasionally, until the berries soften and release their juices.
  2. Carefully pour the cooked blackberry mixture through a fine-mesh sieve set over a bowl, pressing down on the solids with a spoon or spatula to extract as much liquid and pulp as possible. Discard the seeds. Allow the blackberry puree to cool completely.
  3. Open the chilled cans of coconut cream. Scoop out the thick, solid cream from the top, leaving any clear liquid behind. Transfer the thick cream to a large mixing bowl.
  4. Using an electric mixer, whip the coconut cream on high speed for 3-5 minutes until it becomes light, fluffy, and holds soft peaks.
  5. Gently fold the cooled blackberry puree, maple syrup, lemon juice, vanilla extract, and a pinch of salt into the whipped coconut cream until just combined and uniformly colored. Be careful not to overmix.
  6. Spoon the mousse into individual serving bowls or glasses.
  7. Chill in the refrigerator for at least 2-4 hours, or until the mousse is set and firm.
  8. Before serving, garnish each portion with fresh blackberries.

Notes

Ensure your full-fat coconut cream is thoroughly chilled overnight for best whipping results.

Adjust the amount of maple syrup to your preferred sweetness level and the tartness of your blackberries.

For an extra smooth mousse, straining the blackberry puree is essential to remove seeds.

This mousse can be prepared a day in advance and stored covered in the refrigerator.
