  • 4 large eggs
  • 1 tablespoon white miso paste
  • 1 tablespoon milk or water
  • 1 teaspoon unsalted butter or neutral oil
  • 1 cup cooked white rice
  • 1 teaspoon black sesame seeds
  • 1/2 sheet nori, shredded
  • Pinch of salt (optional, miso is salty)
  • Freshly ground black pepper to taste

Instructions

  1. In a medium bowl, whisk together the eggs, white miso paste, milk or water, and a pinch of black pepper until well combined and the miso is dissolved. If using salt, add it sparingly, as miso is naturally salty.
  2. Heat the butter or oil in a non-stick skillet over medium-low heat.
  3. Pour the egg mixture into the heated skillet. Allow the edges to set slightly, then gently push the cooked egg from the edges towards the center with a spatula, tilting the pan to let uncooked egg flow underneath.
  4. Continue to cook, gently folding and stirring, until the eggs are cooked to your desired creaminess. Avoid overcooking to maintain a tender texture.
  5. Divide the cooked white rice between two serving bowls.
  6. Spoon the miso scrambled eggs next to the rice in each bowl.
  7. Garnish generously with black sesame seeds and shredded nori seaweed. Serve immediately.

Notes

For extra creamy eggs, remove them from the heat just before they are fully set, as they will continue to cook slightly from residual heat.

Adjust the amount of miso paste to your preference; white miso offers a milder, sweeter flavor.

This dish pairs well with a side of pickled ginger or a sprinkle of furikake for added flavor.

Ensure your nori is fresh for the best crisp texture and flavor.
