  • 23 drops purple gel food coloring
  • *For the Coating and Decoration:*
  • 12 oz white chocolate melting wafers or good quality white chocolate, chopped
  • 2 oz purple candy melts or white chocolate with purple food coloring
  • 1 tablespoon decorative sprinkles or finely chopped culinary lavender for garnish

Instructions

  1. In a large bowl, combine the vanilla cake crumbs, softened cream cheese, ground culinary lavender, and lavender extract (if using). Mix thoroughly with a spoon or your hands until a uniform, pliable dough forms.
  2. Add the purple gel food coloring, starting with 2 drops, and mix until the desired vibrant purple color is achieved.
  3. Roll the mixture into 1-inch balls and place them on a parchment-lined baking sheet.
  4. Refrigerate the truffles for at least 30 minutes, or until firm.
  5. Melt the white chocolate melting wafers in a microwave-safe bowl in 30-second intervals, stirring after each, until smooth. Alternatively, use a double boiler.
  6. Dip each chilled truffle into the melted white chocolate, ensuring it is fully coated. Gently tap off any excess chocolate and return the truffle to the parchment-lined baking sheet.
  7. Allow the white chocolate coating to set. You can place them back in the refrigerator for 10-15 minutes to speed this process.
  8. Melt the purple candy melts (or white chocolate with purple food coloring) in a small bowl. Drizzle the purple chocolate over the set white chocolate truffles using a spoon or a piping bag with a very small tip.
  9. Immediately sprinkle with decorative sprinkles or finely chopped culinary lavender before the drizzle sets.
  10. Refrigerate the truffles again until the purple drizzle is fully set, about 15-20 minutes.

Ensure you use culinary-grade lavender, which is safe for consumption and has a milder flavor.

Chilling the truffle balls thoroughly before dipping is essential for a smooth coating and to prevent them from falling apart.

For a thinner white chocolate coating, you can add 1 teaspoon of coconut oil or vegetable shortening to the melted chocolate.
