Ingredients

  • * 1 (15-ounce) can cannellini beans, rinsed and drained
  • * 1/2 cup salsa, mild or medium
  • * 1/2 teaspoon ground cumin
  • * 1/4 teaspoon garlic powder
  • * Salt and black pepper to taste
  • * 4 (8-inch) flour tortillas
  • * 1 cup shredded Monterey Jack or Mexican blend cheese
  • * 1 tablespoon olive oil, or cooking spray
  • * For serving:
  • * 1/2 cup diced fresh tomatoes
  • * 2 tablespoons chopped fresh cilantro or parsley
  • * 1/4 cup plain Greek yogurt or light sour cream

Instructions

  1. In a medium bowl, mash about half of the rinsed and drained white beans with a fork or potato masher, leaving some whole for texture.
  2. Stir in the salsa, ground cumin, garlic powder, salt, and black pepper until well combined.
  3. Lay one tortilla flat. Spread about 1/4 cup of the bean mixture over one half of the tortilla, leaving a small border. Sprinkle with 1/4 cup of shredded cheese.
  4. Fold the other half of the tortilla over the filling to create a half-moon shape. Repeat with the remaining tortillas, bean mixture, and cheese.
  5. Lightly brush or spray both sides of each quesadilla with olive oil.
  6. Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
  7. Place 1-2 quesadillas in the air fryer basket in a single layer, ensuring they do not overlap.
  8. Air fry for 6-8 minutes, flipping halfway through, until the tortillas are golden brown and crispy, and the cheese is melted and bubbly. Cooking time may vary depending on your air fryer model.
  9. Remove the cooked quesadillas from the air fryer and repeat with any remaining quesadillas.
  10. Serve immediately, garnished with diced tomatoes, fresh cilantro or parsley, and a drizzle of plain Greek yogurt or light sour cream.
