Ingredients
- * 1 (15-ounce) can cannellini beans, rinsed and drained
- * 1/2 cup salsa, mild or medium
- * 1/2 teaspoon ground cumin
- * 1/4 teaspoon garlic powder
- * Salt and black pepper to taste
- * 4 (8-inch) flour tortillas
- * 1 cup shredded Monterey Jack or Mexican blend cheese
- * 1 tablespoon olive oil, or cooking spray
- * For serving:
- * 1/2 cup diced fresh tomatoes
- * 2 tablespoons chopped fresh cilantro or parsley
- * 1/4 cup plain Greek yogurt or light sour cream
Instructions
- In a medium bowl, mash about half of the rinsed and drained white beans with a fork or potato masher, leaving some whole for texture.
- Stir in the salsa, ground cumin, garlic powder, salt, and black pepper until well combined.
- Lay one tortilla flat. Spread about 1/4 cup of the bean mixture over one half of the tortilla, leaving a small border. Sprinkle with 1/4 cup of shredded cheese.
- Fold the other half of the tortilla over the filling to create a half-moon shape. Repeat with the remaining tortillas, bean mixture, and cheese.
- Lightly brush or spray both sides of each quesadilla with olive oil.
- Preheat your air fryer to 375°F (190°C) for 3-5 minutes.
- Place 1-2 quesadillas in the air fryer basket in a single layer, ensuring they do not overlap.
- Air fry for 6-8 minutes, flipping halfway through, until the tortillas are golden brown and crispy, and the cheese is melted and bubbly. Cooking time may vary depending on your air fryer model.
- Remove the cooked quesadillas from the air fryer and repeat with any remaining quesadillas.
- Serve immediately, garnished with diced tomatoes, fresh cilantro or parsley, and a drizzle of plain Greek yogurt or light sour cream.
Notes
* For an extra layer of flavor, sauté 1/4 cup finely diced onion and 1 clove minced garlic before adding the beans and salsa.
* Adjust the spice level of the bean mixture by adding a pinch of cayenne pepper or a dash of hot sauce.
* Ensure your air fryer is preheated for optimal crispiness and even cooking.
* Do not overcrowd the air fryer basket; cook in batches if necessary to achieve the best results.
* These quesadillas are also delicious with a side of guacamole or extra salsa.
