Instructions

  2. In a separate medium bowl, whisk the eggs, then add the coconut milk, melted butter (or oil), pandan extract, and vanilla extract (if using). Mix until well combined.
  3. Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or spatula until just combined. A few lumps are acceptable; do not overmix, as this can lead to tough waffles.
  4. Preheat your waffle maker according to the manufacturer's instructions. Lightly grease the waffle grids if necessary.
  5. Pour about ½ to ¾ cup of batter onto the hot waffle maker, or the amount recommended by your appliance. Close the lid and cook for 3-5 minutes, or until the waffles are golden brown and crisp.
  6. Carefully remove the cooked waffle and repeat with the remaining batter. Serve immediately.

Notes

For extra crispiness, cook the waffles for an additional 30-60 seconds after they are done.

Do not overmix the batter; this can develop the gluten too much, resulting in dense waffles.
