  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

  • Maple syrup for serving

Instructions

  1. Preheat your waffle iron according to the manufacturer's instructions. Lightly grease the waffle iron plates if they are not non-stick.
  2. In a large bowl, whisk together the almond flour, baking powder, and salt until well combined.
  3. In a separate medium bowl, whisk together the eggs, almond milk, melted butter or coconut oil, maple syrup, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients and mix gently until just combined. Be careful not to overmix; a few small lumps are acceptable.
  5. Pour or scoop about ½ cup of batter (or the amount recommended by your waffle iron) onto the hot waffle iron. Close the lid and cook for 4-6 minutes, or until the waffle is golden brown and cooked through. Cooking time may vary depending on your waffle iron.
  6. Carefully remove the cooked waffle and place it on a wire rack to prevent it from becoming soggy. Repeat with the remaining batter.
  7. Serve the warm waffles immediately, topped with fresh berries and a generous drizzle of maple syrup.

Notes

Do not overmix the batter; overmixing can lead to tougher waffles.

Adjust the amount of sweetener in the batter to suit your preference.

For extra crispness, place cooked waffles directly on a wire rack in a warm oven (around 200°F / 95°C) while you finish cooking the rest.

Leftover waffles can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 1 month. Reheat in a toaster or oven.
