Description

This dish features tender parsnips, roasted to a golden hue and coated in a delicate maple glaze. The natural sweetness of the parsnips is enhanced by the rich, caramel notes of maple syrup, while fresh thyme sprigs infuse an aromatic, earthy counterpoint. The parsnips achieve a soft, yielding interior with a slightly caramelized exterior, creating a harmonious balance of flavors and textures.

Ingredients

Scale
  • 1.5 lbs parsnips, peeled and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1 tablespoon fresh thyme leaves, plus extra sprigs for garnish
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons water or vegetable broth (optional, for thinner glaze)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the peeled and cut parsnips with olive oil, salt, and black pepper until evenly coated.
  3. Spread the seasoned parsnips in a single layer on the prepared baking sheet. Roast for 15-20 minutes, or until they begin to soften and lightly brown.
  4. While the parsnips are roasting, whisk together the maple syrup and fresh thyme leaves in a small bowl. If you prefer a thinner glaze, add 1-2 tablespoons of water or vegetable broth.
  5. Remove the parsnips from the oven. Pour the maple-thyme glaze over them, tossing gently to ensure all pieces are coated.
  6. Return the glazed parsnips to the oven and continue roasting for another 10-15 minutes, or until they are tender, caramelized, and the glaze has thickened slightly.
  7. Garnish with fresh thyme sprigs before serving.

Notes

Choose firm, medium-sized parsnips for the best flavor and texture.

For a deeper caramelization, broil the parsnips for the last 2-3 minutes, watching carefully to prevent burning.

Adjust the amount of maple syrup to your preferred level of sweetness.

This dish can be prepared ahead of time and gently reheated in the oven.

Consider adding a pinch of red pepper flakes for a subtle hint of warmth.
