  • 500g boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tablespoon neutral cooking oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar, packed
  • 1/4 cup water or chicken broth
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • Cooked white rice, for serving
  • 2 green onions, thinly sliced, for garnish

Instructions

  1. In a small bowl, whisk together the soy sauce, brown sugar, 1/4 cup water or chicken broth, minced garlic, and grated ginger.
  2. In another small bowl, combine the cornstarch with 2 tablespoons of water to create a slurry. Set aside.
  3. Heat the cooking oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until browned on all sides and mostly cooked through, about 5-7 minutes.
  4. Pour the prepared soy sauce mixture over the chicken in the skillet. Bring the sauce to a gentle simmer.
  5. Stir the cornstarch slurry once more, then slowly pour it into the simmering sauce while stirring continuously.
  6. Continue to cook, stirring frequently, for 2-3 minutes, or until the sauce has thickened to a glossy, caramel-like consistency and coats the chicken well. Ensure the chicken is fully cooked.
  7. Remove from heat and serve immediately over hot cooked white rice, garnished generously with sliced green onions.

Notes

For extra flavor, marinate the chicken in a tablespoon of soy sauce for 15-20 minutes before cooking.

Adjust the sweetness of the sauce by adding more or less brown sugar to your preference.

Ensure the cornstarch slurry is well mixed before adding to prevent lumps in the sauce.

This dish pairs well with a side of steamed vegetables like broccoli or green beans.
